Cafe Rio's Creamy Tomatillo Dressing

So, so, so good! I am missing Cafe Rio and so for Cinco de Mayo we had some people over and had Cafe Rio night :) Found the recipe here: http://www.the-girl-who-ate-everything.com/2012/05/cafe-rios-creamy-tomatillo-dressing.html

Ingredients
  • 1 (1 ounce) package Hidden Valley Ranch Dressing mix
  • 1 cup buttermilk
  • 1 cup Mayo
  • 1 large or 2 small tomatillos (they are green and by the tomatoes)*
  • 1 clove garlic, minced
  • 1/2 bunch cilantro, chopped
  • 1/2 teaspoon lime juice*
  • 1/2 to 1 small jalapeno, seeds removed*
Instructions
  1. Blend all ingredients together in a blender or food processor and store in the refrigerator to let the flavors meld. Beware that the dressing tends to get hotter the longer it sits.

*I used 3 medium sized tomatillos, the juice from one small lime, and did not add the jalapeno (I don't like it hot)

Peach Syrup

Thanks to my Aunt Sue and her peach trees, we have a TON of fresh peaches! I decided to make peach syrup and found the recipe at home-ec101.com.

5 cups pureed peaches (peeled and pitted)
2 cups sugar (I only used 1 cup)
2 tsp. vanilla
2 Tbsp. lemon juice

The recipe says to boil the puree, lemon juice, and sugar, remove from heat and then add the vanilla. It then gives instructions for canning. I only made half of the recipe and just put everything in a blender without cooking it and it tastes amazing! I don't plan on canning it and I'm sure it will be gone this week :)

Thai Peanut Sauce

From my friend Amy. I made a salad last night for dinner with spinach, snap peas, carrots, and Teriyaki chicken and used this as the dressing. So yummy!

1/4 cup peanut butter
2 Tbsp seasoned rice vinegar (I used regular rice vinegar)
2 Tbsp honey
2 Tbsp vegetable oil (I used olive oil)
2 Tbsp sugar
1 Tbsp water
1 Tbsp soy sauce
1 1/2 tsp kosher salt (I used 1 tsp salt)
1/2 tsp cayenne pepper (I didn't add this)
Pinch crushed red pepper (I didn't add this)

Combine all ingredients together and mix well.
