3/4 cup butter flavored shortening
1 cup sugar
2 eggs
1/2 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1 tsp salt
Cream sugar with shortening for 3 min. Add eggs and vanilla and beat again until smooth. Add dry ingredients. Chill for 1 hour. Roll out (nice and thick) and cut into shapes. Bake for 6 min at 400 degrees. They should be barely brown at the edges and may look a little underdone, but will firm up if you leave them on the cookie sheet a few min after baking.
Icing:
1 cup powdered sugar
2 tsp milk
2 tsp light corn syrup
1/4 tsp almond extract (or any your prefer lemon is really good too)
food coloring
Stir together sugar and milk. Add other ingredients. If you need to thin it, add more corn syrup. Spread on cookie with the back of a spoon. You can drizzle on other colors over the first coat to make them super cute.
The icing makes them look really good, but using traditional frosting is so much better tasting (to me) nice to have either option. Enjoy!!
