Zucchini Bread

3 eggs
1 cup canola oil
2 cups sugar
2 cups grated zucchini
2 cups flour
1/4 tsp baking powder
1 tsp salt
2 tsp cinnamon
2 tsp baking soda
2 tsp vanilla
1 cup chopped nuts (optional)

Beat eggs, sugar and oil, stir in zucchini and dry ingredients. Then stir in vanilla and nuts. Pour into greased loaf pans. Bake at 325 for 50-60 min.
(Also makes great cakes and cupcakes, top with cream cheese frosting)
